Saw It. Pinned It. Did It.

So last week as I was perusing other people's SPD posts from the link up with Katie and Steph.  I saw this little gem that was made.


Then I remembered I pinned it too and it was high time I made it! So off I went to construct it.


Ingredients:
1/2 c. uncooked quinoa
1 large egg
1/2 c. chopped onion
1/2 c. fat free shredded mozzarella
1 t. minced garlic
1 T. dried basil
1 t. dried oregano
pinch of salt
pizza sauce for dipping
I didn't have the basil, oregano, and garlic, so I used an Italian seasoning instead.  

After the ingredients were mixed.


  I also didn't have the mini muffin tins, so I used regular ones and only filled them half-way.   I am a little dense though and only filled them on half the side of the pan, rather than covering the whole bottom and just filling them half-way.  That didn't even occur to me until now.  Don't judge.



Mmmm... Goodness! I wish I would have had a little more seasoning, but the pizza sauce did well.
