Sweets! Candy! Ice Cream!

I can't wait to have them all again. I gave them up for Lent and I've been wanting them constantly. I will have to say it's been a very hard Lent and I've been very prayerful.

I wanted to bake. I wanted cookies. I wanted something sweet, but I couldn't commit to not eating any of the finished products or the dough as I made it. I looked in my freezer and found some zucchini. OOOOOOHHHHHH zucchini bread!

So I thawed all the zucchini and looked at the recipe. I had everything except the eggs, so today I went to the store and got eggs. I mixed everything together and put it in the pan and into the oven. I baked it for an hour, pulled it out and let it cool off. Took it out of the pan, cut into it and out oooooozzzzzzed the batter. What the heck!?!?! The top was brown and was even burning in the corners. The only thing I can think is that there was too much batter in the pan to cook all the way through. I'm so sad! All that wasted time and effort!

I did end up making another batch and it worked a lot better, but this time I used a different pan.
