So I've been trying to add variety to my meals, considering I only get one sometimes it's an all day task of trying to figure out what I am going to eat and what really sounds good. I mean I only get one meal, so I better make it good.
Meals usually consist of beef tacos, BBQ hamburgers, salads, homemade potato fries, BBQ chicken sandwiches, breakfast-pancake and egg, and the staple of grilled cheese and siamin. They do rotate around, but when cooking for one, I usually end up with lots of leftovers.
I have talked about adding different things to my diet in posts past, such as the time I made fried rice or the time I really got into french bread and spaghetti sauce. During the winter I add soups to the repertoire, but now it is summer and it's time to bust out the BBQ.
I enjoy having BBQ Chicken, but have been finding it to be really dry. (They are chicken breast and I just thought they were supposed to be dry) I couldn't figure out if I was cooking them too long or what, so I consulted my You Grill, Girl cookbook (a present from Embo-I didn't buy it for myself) and it suggested for skinless, boneless chicken breast cook them at medium/high for 4 min. on each side. I didn't think that would be long enough, so I consulted another recipe in the same book and it suggested 12 min on each side. I thought that sounded more reasonable. It also said that the chicken will be done when you cut into it and clear juice runs out and that it will plump up like your breast do when you wear a push up bra. Hello! They've been plump, but when I've been cutting into my breast before, there has been no juice! Obviously I'm cooking it too long!
The other day, I tried the reicpie and it worked out great! I had nice plump, moist breasts of chicken for a chicken sandwich and then last night, I re-heated a piece I had cooked the other night to make chicken tacos. Mmmm they were good and so was the lighting in my kitchen.
